  • ¼ cup nonfat plain Greek yogurt
  • ½ cup liquid egg whites
  • 1 beets
  • 2 tbsp coconut flour
  • ¼ cup buckwheat
  • 1 tsp liquid Stevia
  • ½ tsp baking soda
  • ½ tsp red food coloring
  • ¼ cup(s) Optimum Nutrition Protein Shake – Creamy Vanilla powder
  • 1 cup non-fat plain Greek yogurt
  • ¼ cup ricotta cheese (skim-milk)

  • Blend the cake ingredients using a hand blender or food processer.
  • Transfer the blended mixture to a muffin pan or muffin case.
  • Bake at 350 F (176 C) for about 35-40 minutes While baking, keep checking if your cake is ready – just insert a knife into the mixture and take it out. If it comes out clean, the cake is ready. If there’s a little bit of the cake batter on the knife, then it’s not.
